Sweet and Spicy Delight: A Guide to Homemade Pepper Jam

Pepper jam, with its perfect balance of sweetness and heat, is a versatile condiment that can elevate a variety of dishes. Making your own pepper jam is a rewarding culinary endeavor that allows you to customize the flavors to suit your taste preferences. In this guide, we’ll take you through the step-by-step process of creating a delicious homemade pepper jam that will add a delightful kick to your meals.

Ingredients:

  • 2 cups bell peppers (assorted colors), finely chopped
  • 1 cup hot peppers (such as jalapeños or serranos), finely chopped (adjust to your preferred spice level)
  • 1 cup apple cider vinegar
  • 6 cups granulated sugar
  • 1 package (1.75 oz) fruit pectin (e.g., Sure-Jell)
  • 1/2 teaspoon butter (optional, to reduce foaming)
  • Pinch of salt

Equipment:

  • Large pot
  • Sterilized glass jars with lids
  • Canning funnel
  • Wooden spoon
  • Ladle
  • Jar lifter
  • Water bath canner

Step 1: Prepare the Jars and Lids

  1. Sterilize Jars:
    • Wash jars and lids in hot, soapy water. Sterilize them by boiling in a water bath for 10 minutes, or use the sterilize setting on your dishwasher.
  2. Keep Jars Hot:
    • Keep the jars hot until ready to use by placing them in a warm oven or leaving them in hot water.

Step 2: Prepare the Peppers

  1. Chop Peppers:
    • Remove seeds and membranes from both bell peppers and hot peppers. Finely chop the peppers. Wear gloves when handling hot peppers to avoid skin irritation.

Step 3: Cook the Pepper Jam

  1. Combine Ingredients:
    • In a large pot, combine the chopped peppers, apple cider vinegar, and fruit pectin. Stir well.
  2. Bring to a Boil:
    • Over medium-high heat, bring the mixture to a rolling boil.
  3. Add Sugar:
    • Add the granulated sugar all at once, stirring constantly to dissolve.
  4. Boil Vigorously:
    • Bring the mixture back to a rapid boil. Allow it to boil vigorously for 1-2 minutes, stirring constantly.
  5. Check Gel:
    • To test if the jam has reached the desired consistency, place a small amount on a cold spoon and let it sit for a moment. Run your finger through it; if it wrinkles and holds its shape, it’s ready.

Step 4: Fill Jars and Process

  1. Remove from Heat:
    • Remove the pot from the heat. Skim off any foam that may have formed on the surface.
  2. Fill Jars:
    • Using a canning funnel, ladle the hot pepper jam into the prepared, hot jars, leaving about 1/4-inch headspace.
  3. Remove Air Bubbles:
    • Run a non-metallic spatula or bubble remover around the inside of the jar to release any air bubbles.
  4. Wipe Jar Rims:
    • Wipe the rims of the jars with a clean, damp cloth to ensure a proper seal.
  5. Apply Lids and Bands:
    • Place sterilized lids on the jars and screw on the bands until they are fingertip-tight.
  6. Process in Water Bath:
    • Process the jars in a water bath canner for 10 minutes to ensure they are sealed properly.
  7. Cool and Check Seals:
    • Allow the jars to cool completely. Check the seals by pressing down on the center of each lid; it should not pop back.

Step 5: Enjoy Your Pepper Jam

  1. Store Properly:
    • Store the sealed jars in a cool, dark place. Once opened, refrigerate the jam.
  2. Serve and Enjoy:
    • Pepper jam is a versatile condiment. Spread it on toast, use it as a glaze for meats, or pair it with cheeses for a delightful appetizer.
